The California Milk Advisory Board (CMAB) will kick off the fourth annual Real California Pizza Contest on March 1.

Professional chefs and pizzaioli from across the U.S. can submit their innovative recipes into the contest from March 1 through April 24. All recipes must feature cow’s milk cheese from California. The top entries will be selected for the bake-off final, to be held on June 22 in Napa, California, with up to $30,000 in prize money at stake.

Spencer Glenn of Pizza My Heart, located in Pacific Grove, California, earned the 2021 grand prize for his Life Is Gourd pie, representing the Plant-Forward category. It featured a California Asiago/Romano blend, Toma and mozzarella, plus fried baby sage leaves, pomegranate arils and pistachios. Glenn also won the Cal-Mex category for his Elote con Chorizo pizza, which paired California Oaxaca, crema, and cotija with fresh chorizo and tangy Tajin for a tasteful homage to traditional street corn. Leah Scurto claimed the REAL Californian category with her Nico Pie, which utilized multiple cheeses from California to complement two quintessential Golden State ingredients: artichokes and garlic.

California is a reliable, consistent source of sustainable dairy products used by chefs throughout the world. As the nation’s largest dairy state, California boasts an impressive lineup of award-winning cheesemakers and dairy processors that are helping to drive dining innovation.

California leads the nation in milk production and is responsible for producing more butter, ice cream and nonfat dry milk than any other state. The state is the second-largest producer of cheese and yogurt. California milk and dairy foods can be identified by the Real California Milk seal, which certifies they are made with milk from the state’s dairy farm families.
